Undhiyu - Photo Recipe

Here is a photo recipe for Undhiyu - a most amazing Gujarati dish. Undhiyu usually made in the winter has lots and lots of veggies and greens and is an extremely healthy meal in itself. There are many varieties including a non-veg. one with Mutton made in the Surat area. You get some oily version of Undhiyu in any decent Gujarati thali place in Mumbai.

The following photo recipe was of a Vadodara version cooked by my Aunt:

Purple Yam (Kand in Marathi) Large raw bananas
Small Brinjals Surati Papadi
Fresh Garlic Papdi na dana (in Gujarati)
Popta (in Gujarati) (Green chana?) Small boiled potatoes
Surati Papadi, Valor Methi
All ingredients raw Fry the potatoes
Methi Pakoda (Methi na Muthiya in Gujarati) Fried purple yam and sweet potato?
Ingredients halfway Coriander, Garlic, Chillies in Mixer
Resultant Chutneys Greens cooked in cooker
Fill in green masala Fry brinjals
Start cooking - oil and spices in big vessel Stuffed things with masala
All fried things All the remaining masala
Take the cooker with greens Put in big vessel
Shake don't stir Undyo is ready
